Or at least until I find something that is even more tasty and just as easy and healthy! I blogged about making one of those banana+egg pancakes before, but this is my new way of making them. I tell you, it’s like eating cake for breakfast!
I do have to admit, it was not on purpose that the pancakes turned out to look more like scambled eggs! Somehow I wasn’t able to flip them without breaking them, so I went with the scrambled look 😉
Blend together the following ingredients: ½-1 banana, 2 eggwhites (or use the whole egg, that’s fine too), 1 tsp flaxseeds, 1 tsp Brinta (totally optional) + ½ tsp Stevia for sweetening (or use any sweetener you like). You can also add a dash of cinnamon if you like!
Pour the mixture in a pan and bake. See if you can keep them pancake-shaped in stead of scrambling them 😉 Put some frozen (already a bit defrosted, but not necessary) raspberries on a plate, top them with your pancakes/scrambled pancakes and top that with some Greek yoghurt and a bit of honey.
