healthy

About time for a new update of my life in snapshots? I thought so! Warning: prepare for lots of healthy foods! Although, this doesn’t summarize my “diet” accurately enough – it’s merely a reflection of my healthiest choices the past weeks. I’m not saying that anything I don’t take pictures of is unhealthy, just know that I don’t always eat perfectly healthy! I’m human, after all ;)

001

  1. Working on my report about my internship in the library; this was my healthy snack box I brought ;)
  2. I’ve started running! I’m taking a six-week course and at the end I’ll (hopefully) be able to run for at least 20 minutes straight. You can read about my first experience at Just Keep Running, by the way!

  1. EkoPlaza, my favorite “health store” in the city. All really great healthy, biological, organic products! Too bad it’s a little expensive, so I don’t go there often. Makes going there a treat, though!
  2. Working out those legs… and taking some much needed rest after ;)

003

  1. Polkadotted nails, I love it!
  2. Playing dress-up ;) I have actually never worn this dress anywhere since I bought it, it’s a shame! Oh, and those are my absolute favorite high-heeled shoes, they’re the only ones I can actually walk, stand and even dance on for more than five minutes ;)

  1. I’m really into working out, can you tell? This was after I had been sick a few days, so I was proud to have completed 45 minutes :)
  2. The famous green pancakes! Recipe is here.

This is so simple that you almost wouldn’t believe how good this tastes! No need to scroll for some fancy recipe, it’s simply fresh spinach, goat’s cheese, walnuts & honey. No measurements, just add to taste :) Enjoy!

Sounds kind of weird, huh? But oh my, they taste gooood! If you love anything healthy, green and shaped like a pancake, you should definitely try this recipe! It’s as simple as that… and as making them ;) Scroll for the recipe!

Is that even possible? Yes, it is! No sugar, no butter, no regular flour. You could even say that these are very healthy cupcakes! As long as you don’t eat the entire batch in one sitting, of course ;) For these I used stevia instead of sugar (my enemy), oat flour instead of regular flour and substituted Greek yoghurt for butter. Hell yeah, a healthier version of cupcakes! And my my my, they were good. I adapted a recipe from a cupcake/baking book that I have. I’ll be adapting more recipes in the future, it’s fun to try to make these things healthy ;) My recipe makes 6 cupcakes.

Time for a visual update on my life again! Prepare for lots of food pictures ;)

001

  1. Made some super easy icecream from frozen bananas + a little cashewbutter.
  2. I’m becoming a green tea junkie, as well as a Gilmore Girls junkie! The both of them together… well, you can imagine that’s like heaven for me ;)

002

  1. Brainstorming session for my graduation project.
  2. Salad salad salad! I blogged about this one here.

003

  1. Super yummy dinner, I’m getting hungry just looking at it! So so good, and really simple. I know I’m a tease, but recipe on the blog soon! (Though it’s not hard to figure out if you study the pictures ;))
  2. Frozen pizza topped with fresh tomatoes and red onion, yum. Did I ever mention how much I love red onion?

004

  1. Cozy time on the couch with a blanket and Gilmore Girls on my tv.
  2. Green tea time!

005

  1. I finally got a couch!!! Yes, I’m super exciting about that, ‘cause in the 3,5 years I’ve been living by myself I never had a couch before! And it’s PINK, hello amazing couch!
  2. I love this little guy so much! How cool does my nephew look in his sweater & cap? He’s turning 3 already this June, time flies.
