Sweet pancakes with blueberry-maple syrup

It’s hard to choose, but I think that these pancakes are my favorite! Or actually, the combination of these sweet pancakes plus that amazing topping made of blueberries and maple syrup… that’s my favorite. I’m in love with maple syrup, it’s seriously the best thing I have ever tasted. Anyone with me?


For the pancakes

I actually based my measurements on feeling, but I’ll write down how much of everything I probably used ;)

  • 3 tbsp oatmeal
  • half a handful of walnuts
  • 1 tsp stevia
  • 1 tsp baking powder
  • 1 tsp raw cacao nibs
  • 2 eggwhites, 1 yolk
  • 1 tbsp (oat) milk

Start by blending oatmeal and walnuts together until it’s like a flour. Add stevia (or any other sweetener), baking powder, a few raw cacao nibs (or you can choose cacao powder), two egg whites & one yolk and a little milk of your choosing. I used oat milk for these pancakes, but I mostly use either soy milk or almond milk.

For the topping

Microwave a handful of blueberries with a little maple syrup until the berries are soft.
