I like to snack. Preferably on sweet things. Which used to be kind of a bad habit – until I changed my lifestyle and started eating healthy. I rarely crave anything super sweet anymore, can you believe it? But when I do, there are tons of healthy options; like these yummy little creations! Raw, no-bake cashew-coconut-chocolate balls. Don’t really know how to call them, but this seems accurate enough 😉 Read on for the recipe!
Don’t they look so good? Well, let me tell you: they are so good. At least, that’s what I think!
- 5-6 (pitted!) dates
- a handful of cashews
- 1 tbsp shredded coconut/coconut flour
- ½ – 1 tbsp cacao powder
- 1 – 1 ½ tbsp tahini (sesame butter) (this is more for consistency than for taste)
Chop up the dates and cashews, in small pieces – your blender will thank you for this! After this you just add everything together in a blender (of a food processor, if you have on of those. or in my case: a magic bullet) and blend until consistency is smooth-like – chunks are okay, good for texture! Use a teaspoon to get scoops of the stuff outta the blender, and roll it into balls. Let them cool in the fridge for at least an hour, be patient and then… enjoy! (but not all in one sitting though!)
